When the pilot is lit it heats the thermocouple that reacts through temprature/expansion relationship with a sprung seated valve that stops gas being supplied to the main burners. When the thermocouple is hot enough it allows this seated valve to lift so that when you release from the pilot position gas is ready to be delivered to your main burners.
